How to make ice cream rolls is the question that we have been getting from our visitors in the past couple of months so we worked on modifying recipes to developed a method that will give the best ice cream rolls, or as close to the real thing as possible.

How Are Ice Cream Rolls Made Commercially?

Ice cream rolls also known as rolled ice cream or as it is originally referred as Stir-fried ice cream (I-Tim-Pad in Thai) is a lovely ice dessert carefully made by hand on a iced grill (Ice Cream Rolls Machine). The process starts by pouring milk on the iced grill after which other ingredients are added (fruits, Nutella, Oreo, Chocolate etc…) and mixed right on the surface of the iced grill. After the mix obtains consistency, it’s spread evenly across the surface of the iced grill and then scrapped from it using a paint scraper by rolling it towards the end of the iced grill.

Where Does This Technique Of Making Ice Cream Rolls Come From?

This ice cream making technique originated in Thailand in 2009 and started as a simple frozen desert made by mixing couple of ingredients and candy. Only few vendors existed at the time and was not popular yet. It started getting attention by the end of 2011 when it spread nation wide across Thailand and by 2012 in conquered the neighboring markets of Cambodia and Malaysia. It become globally known thanks to the internet and the viral videos posted on YouTube.

How To Make Ice Cream Rolls At Home?

We discovered couple of methods that you can use to make this delicious dessert at home but we only picked one. The criteria for picking the two best methods involves being less time consuming, using materials and tools that are available at any home or easily obtainable as well as expertise and time required.

Make sure that the pan’s height is low and it is very thin for the best freezing effect and to be accessible by a paint scrapper which is crucial for this method. This method is the most similar to the original thai method but it doesn’t involve the original ice cream rolls machine. Also, an important part in this method play the paint scrapers

  1. Start by mixing the milk, heavy cream, sugar, and salt straight into a large metal skillet or large cooking pan.
  2. Stir everything til it combines using a heat resistant spatula.
  3. Place the skillet on the stove over high heat and continue stirring til the milk gets hot and the sugar dissolves. If you don’t stir constantly the sugar will start burning on the bottom of the skillet.
  4. When the mixture starts boiling remove the skillet from the heat and let the mixture cool to room temperature.
  5. When the base will cool down, add the other ingredients you chose. You can choose from a variety of toppings such as sprinkles, Nutella, Oreo, fresh fruits, dry fruits and so on. (The more you add the harder it will be to roll at the end)
  6. Once you add them you can use the paint scrapers to chop them into small pieces to your preference. Chopping the ingredients up will improve the texture of the ice scream.
  7. After you get a combined mixture of all the ingredients you want in your ice cream, you should place the skillet leveled in a freezer for 4 hours. For this method to work you need to patient and follow the instructions because if you don’t freeze the ice cream enough it wont roll, you will just get cool dessert.
  8. Important: Before you take the skillet out of the freezer don’t forget to freeze the bowl you will use to store the rolls and the paint scrapers you will use to scrape and roll the ice cream into the freezer for at least 15-30 minutes. The rolls will be very thin so they will absorb heat very well and will start melting as soon as you make them so it’s crucial to serve them in cold dishes and use cold tools while you are scraping them.
  9. Important: After the freezing time has passed make sure you are ready to start scraping because this is something that needs to be done right after you remove the skillet from the freezer. Quickly scrape the ice cream into rolls by starting from one end at an angle and pushing carefully to the other end. If the ice cream doesn’t roll don’t panic, get a butter knife and help with the forming of the rolls.
  10. Get the frozen bowl out of your freezer and place each roll in your bowl for serving. You can top the rolls with whatever you choose. More fruit maybe or some caramel, some sprinkles maybe.

So now you do not have to miss out on having ice cream just because it is too hot outside or the traffic is bad or perhaps you were just not feeling like going outside!

An ice cream making machine is one of the best appliances you can add to your kitchen. It offers you the chance to actually have hygienic and healthy frozen desserts, without worrying about expiry dates or chemical preservatives. You control what goes in, what comes out and everything in between. Isn’t this just wonderful?

There are two primary types of ice cream machines available right now:

Machine with a Freezer Bowl

An ice cream maker with a freezer bowl is a pretty good choice for budget centric buyers and first-time experimenters.

There are two main features that concern this type of ice cream machine. The first one is the insulated freezing bowl, which requires being chilled before being used, and the second one is a motorized mixer, which replaces the traditional paddle and churns the ice cream for you.

To use this machine, you need to plan your ice cream making, at least 12 hours (up to 24 hours) in advance. This is so that you put the freezer bowl in your freezer and give it ample time for chilling completely. Machine with a Built-In Freezer

An ice cream machine with a built in freezer is an ideal option for the people who want instantaneous ice cream, without any serious planning, and have no qualms regarding the budget.

What makes this machine different from the one mentioned above is that it has a freezer like compressor built in, which quickly cools down all the ingredients itself (optimum temperature is reached in a few minutes). The cooling occurs while the ingredients are being churned, but some machines may have a different operational style depending on the texture you want.

While it is a bit pricey, an ice cream maker with freezer will automate all your preparing process and give out a variety of flavors to suit your mood or requirement. You may not have to buy a completely new ice cream making machine if you already have an electric mixer. Common Mistakes Committed by Ice Cream Maker Buyers

As with all electronic appliances, a good research is required to make a successful purchase. When buying ice cream makers, there are some blunders that people make regular, due to their assumptions or lack of knowledge. In this section, I am going to discuss the most common mistakes made by buyers, especially the first time buyers.

Size of bowl: The serving size of a machine is not related to its bowl size. Many people make the mistake of thinking both are the same things. Ice cream volume changes as it is being prepared in the bowl and the size does not keep churning / paddling in its calculation. Refer to the specifications for exact serving size of an ice cream machine.

Serving time: All the machines do not have the same or even similar serving times. How To Troubleshoot Ice Cream Maker Problems

There are so many challenges when making ice cream. Everything from the ingredients to the machine to the temperatures to the cook. Here are some common problems and guidance for addressing them.

Ice Cream Won’t Thicken In Ice Cream Maker

There are quite a few different causes of ice cream that does not reach the ideal thickness while being churned. In some cases, when an ice cream maker has a separate, freezable bowl, it may be that it was not in the freezer long enough of the freezer was not cold enough. In others cases where there is a compressor as part of the ice cream maker, it may simply be that the ice cream isn’t ready and needs to be left inside the machine longer. Here is some guidance based on a list of ice cream maker styles.

Freezer-Bowl Style Ice Cream Makers

Here are some things to try and check:

  1. Did you follow the instructions with your maker for the length of time to expect to have the ice cream churning
  2. Did you follow the instructions with your maker for how long to freeze the removable freezer bowl
  3. Sometimes the ingredients in a recipe change the amount of time required to reach a thick ice cream. Coconut milk is an example since often less milk is used when coconut milk is included changing the freezing principles of the mixture
  4. It may be the case that the bowl was not properly frozen, even if it was in the freezer for the specified amount of time. Check the temperature of the freezer and try a location closer to the back of the freezer.

Compressor Style Ice Cream Makers

When an ice cream maker includes a compressor it has more moving parts that all must work together to create your ice cream. These are often more convenient than freezer-bowl style makers though they are larger and heavier. Here are some common problems to check for:

  1. First, check that the ice cream maker has adequate air flow around the unit. Since this is essentially a freezer, it needs to move air to properly cool the ice cream.
  2. Make sure you followed the instructions for the typical time required to thicken the ice cream

  1. Make sure you have enough ice and salt!
  2. Pay attention to the ice cream maker and add ice and salt whenever needed
  3. Be sure to follow the directions for the maker you are using so that you understand the typical amount of time to reach thick ice cream
  4. Consider the ingredients for the flavor of ice cream you are making since this can impact the thickness you will achieve in a short ice cream making cycle

Homemade Ice Cream Too Soft

Sometimes the ingredients in the ice cream flavor work against you and result in a softer ice cream. My favorite coconut ice cream recipe is like that. Often though, it comes down to temperature… just getting the mix cold enough before it goes into the freezer. Most ice cream makers create a softish ice cream that needs more time in the freezer to get hard. Be sure to check the instructions with your ice cream maker to verify you are mixing it long enough and freezing the freezer bowl long enough (if it uses one).

If needed, you can start to experiment with changes to the recipe or ingredients to add some hardeners.

Cuisinart Ice Cream Maker Motor Stopped Working

The ice cream may be too thick. Check the processing time. Turn off ice cream maker. Clean ice cream maker and put freezer bowl in the freezer. Make a new batch once the bowl is frozen for the recommended amount of time. Check the gears as well. If your last ice cream was too thick or too frozen it might have caused some damage to the gears. In this case you would hear the motor running but no movement will be visible. If these tips don’t help. You should always contact the manufacturer or the local dealer and request a service of your unit according to the guarantee or request a part.

Cuisinart Ice Cream Maker Won’t Turn

Several connections can be found between your appliance and the problem you are facing with. Every troubleshooting should start with the following steps. At the beginning, you should always check if your ice cream maker is connected to the electrical grid. Then you should check if your appliance is turned on. If the steps before have been confirmed then you can proceed with further troubleshooting. If the problem has appeared while the ice cream maker was running then you should investigate the thickness of the base of the ice cream. The ice cream might be frozen at the sides as well. Both issues might cause the puddle to stop spinning. You should always turn the ice cream maker off and If there is ice you should scoop it out of the bowl or you should start with a new batch of ice cream which wouldn’t be so thick.  Turning off will prevent further damage to the motor or the gears that might break while the motor tries to spin the paddle in the thick ice cream.

Cuisinart Ice Cream Maker Not Turning

Before we start with the troubleshooting process ensure your ice cream maker is connected to the electrical network. If it is connected to the electrical network then you should check if its turned on. If these steps check out, we are ready to go to the troubleshooting. Usually you get this problem when the appliance is running. This problem can be identified with the thickness of the ice cream base. The thicker the base the harder for the paddle to spin. If the base is too thick it might damage the motor or break the gears which will require a service from your local dealer or the manufacturer. When you notice the paddle not spinning you should turn the machine off right away. If the ice cream base doesn’t have ice on the sides then you should make a totally new batch and start the machine again with the new batch. If the current base is not thick but instead ice has formed on the sides of the ice cream base then you should scoop up the ice really fast and after you are done you can turn the machine back on. For further troubleshooting tips call your local dealer or contact the manufacturer.

Cuisinart Ice Cream Maker Not Churning

Once  you are sure that your ice cream maker is plugged into the electrical grid and that  your machine is turned on then you are ready to processed. This problem can be identified with motor damage or gear damage. Your product doesn’t necessarily have to be damaged but still the following reasons might cause the paddle to stop spinning. Most common reason is the thickness of the ice cream base. If the base is too thick then it might cause the paddle to stop spinning. In this case you should turn your ice cream maker off and remove the ice cream base from the bowl to avoid further damage of the motor or the gears. Try making another batch with lighter ice cream base. The second reason might be frozen sides of the ice cream base. Sometimes when this happens, it stops the paddle from spinning. You should take the same actions, turn your ice cream maker off and scoop the ice from the sides of the bowl as quick as possible so that the frozen bowl remains frozen. After that you can turn your ice maker on and continue with the process.

Cuisinart Ice Cream Maker Troubleshooting

  • Problem : Ice cream is not ready in recommended time
    Solution : Check recipe to make sure that the ingredients are correct. Keep the freezer bowl in the freezer for a longer amount of time before making ice cream. Do not let freezer bowl sit outside of the freezer for more than 5 minutes before making ice cream. Make sure your freezer is set to 0˚F.
  • Problem : Ice cream is not dispensing
    Solution: The ice cream may be too thick. Check the processing time. Check recipe to make sure that the ingredients are correct. Remove the bowl, scoop out and eat the ice cream.
  • Problem : Motor stalls
    Solution : The ice cream may be too thick. Check the processing time. Turn off ice cream maker. Clean ice cream maker and put freezer bowl in the freezer. Make a new batch once the bowl is frozen for the recommended amount of time.
  • Problem : Mix-ins are not dispensing
    Solution :  Check the condiment chute to make sure that mix-ins are not stuck. Clean and dry the chute. Check mixins to make sure that they are not melting. Clean and dry condiment dispensers. Check for jammed mix-ins. Mix-ins may be too large.
  • Problem : The mixing arm is not turning.
    Solution : Check to make sure there is no ice in the freezer bowl. Check to see if unit is on. The ice cream may be too thick.

Cuisinart Ice Cream Maker Paddle Not Turning

This problem can be identified with a couple of issues. Firstly you should check if your ice cream maker is connected to your electrical network. Second check if your ice cream maker is turned on. If last two can be confirmed then the issue can be connected to the motor malfunction or gear damage and malfunction caused by previous work. If the problem has appeared during ice cream making then this problem can be connected to the thickness of the ice cream base or if the ice cream is frozen at the sides. In this case you should turn off your ice cream maker and you should scoop up the frozen part after which you should turn on the ice cream maker to continue. If the ice cream base is too thick you should turn off your ice cream maker to avoid damage to the motor and the gears. Remove the whole batch and make a new lighter one.

Cuisinart Ice Cream Maker Bowl Problems

Sometimes you identify a problem that isn’t there. You should always follow the instructions from your manufacturer’s manual that was provided to you when you bought your ice cream maker. If your ice cream does’t freeze at all than this problem can be traced to the start of the preparation process for ice cream making according to the manual. Freezing your ice cream makers bowl for at least 3-4 hours before you start with the process is the first instruction that every manufacturer gives. The bowls are insulated and have special materials inside the construction of the bowl which make the bowl freezable that is the key to making the perfect ice cream. Also the ice cream base should be refrigerated for at least 2-3 hours before you pour it in the freezable bowl and start the process of ice cream making.
But sometimes you run into a problem that is a real problem and requires a service provided by the local dealer or the manufacturer or a complete replacement of the bowl. Such problems might include damage of the bowl that has caused cracks, leak or similar caused by either treating the bowl on high heat  (example: washing it with hot water) or damage caused by improper storage of the bowl and fall damage. In this cases contact your local dealer and or the manufacturer.

Cuisinart Ice Cream Maker Bowl Not Freezing

You might want to check your freezer temperature, of course this should always be your first step. Other than that  this generally occurs if the bowl has been exposed to heat or if the bowl is not stored flat. Try to always wash your bowl in cold or almost cold water. Perhaps, the bowl is cracked and the vacuum in the base insulation of the bowl no longer exists, so the bowl is no longer holding. If this is the case contact the manufacturer to get a replacement.
