Most of the recipes include diary products which give the ice cream its creamy look and texture and adds to he wonderful taste. But some people are lactose intolerant and some are avoiding dairy products for other issues. One of the best substitutes for dairy products is almond milk. Sometimes making ice cream using almond milk adds to the flavor and the resulting ice cream is more beneficial to your health. Homemade almond milk ice cream is fairly easy to do, so you can have your healthy icy treat.
Almond Milk Ice Cream
- 1 ½ cups of almond milk
- 2 ripe bananas
- 2 tablespoons of chocolate cocoa
- 2 tablespoons of sugar or sweetener of your choice
First, whisk half a cup of almond milk together with the chocolate cocoa and sugar in the microwavable bowl or cup until they are mixed well. Microwave the mixture for 40 seconds and stir well. Cover and refrigerate 1 to 2 hours, or overnight.
In your blender or food processor, put in the bananas, the remaining cup of almond milk, and the cocoa mixture. Blend them for about 10 seconds or until pureed. Process the puree in the ice cream maker for about 20 minutes or until the mixture is thick enough. If a firmer consistency is desired, transfer the ice cream to an airtight container and place in freezer for about 2 hours.
Remove from freezer about 15 minutes before serving.
